Thanksgiving dinner is all about the sides. Does anybody look forward to the turkey the most? Hell, more and more people are turning away from turkey as the main course on Thanksgiving. While the sides are expanding as well, there are still the classics. Where do we stand? Here is our take on five of the classic Thanksgiving dinner sides.
1. Mashed potatoes
Frankly, it’s hard to be enthused about mashed potatoes when sweet potatoes exist. You could have mashed sweet potatoes, of course, and you probably should. The classic, though, is some old-fashioned potatoes with gravy. Now, you can’t put gravy on sweet potatoes, but mashed potatoes are mostly a gravy repository. You definitely want potatoes as a side, but go with the sweet variety.
2. Cranberry sauce
Cranberry sauce is a key component to Thanksgiving dinner. It’s the acidity. Cranberry sauce is basically a palate cleanser that tastes good. For that purpose you need the sauce with the actual cranberries in it, not the canned stuff that takes the shape of the can. There is less bite to that stuff.
3. Dressing
We’re thinking about non-turkey foods, and stuffing is what comes out of the turkey. Dressing is the same stuff, but it’s never seen the inside of a turkey. It’s fine. Getting enthusiastic about dressing feels odd. If it’s cooked well, it does have a nice texture to it. Some softness, some crunchy bits, a mélange of experiences. If only it tasted a bit better.
4. Green bean casserole
Green beans are good. Not great, but good. Casseroles, though, are bad. Our take: Forget about the casserole stuff. Go with the green beans. Maybe add a little spice to bring out the flavor. Green beans don’t need any of that casserole stuff.
5. Dinner rolls
You know, it’s simple, but a proper dinner roll is a big part to the Thanksgiving dinner experience. Bread is part of a big dinner. You normally don’t eat rolls, though. A nice, big dinner roll? With butter? Right on! A crescent roll is OK, but we want that classic roll, with a little bit of browning on the outside.
