Wheat Flour Manufacturing: History
The earliest method wheat flour manufacturers used for manufacturing wheat flour involved grinding the wheat grain between two stones. These hand-operated devices helped in effectively reducing wheat grains into wheat flour. The rubbing of two stones against each other created friction that converted the wheat grains into fine wheat flour.

- Harvesting: The wheat grains are harvested from the wheat fields and carried away to the flour mills on trucks, rails, or barges.
- Grading: After the wheat grains are transported to the flour mill, they are tested to be graded based on various physical and chemical qualities such as protein content, etc. After grading, the wheat grains are stored in silos until the next process takes place.
- Purifying: Before the wheat grains are transferred into a flour mill for grinding it needs to be purified and separated from any unwanted materials. To achieve this, the wheat grains go through various cleaning processes.
- Separator: First, the grains are passed through a device called a separator. The machine passes the wheat grains through a metal screen of various sizes which removes the large stones and rocks.
- Aspirator: Further, the wheat grains are passed through an aspirator which sucks out all the particles that are lighter than the wheat grains.
- Disk separator: The wheat grains are passed through a disk separator which runs the wheat grains over a series of disks. Grains and objects with similar weights pass through the device whereas lightweight objects are left behind.
- Spiral seed separator: Spiral seed separator separates the wheat grains that are oval in shape from other plant grains that are round in shape. This works on the principle of centrifugal force that collects the oval wheat grains in the center and throws the round plant seeds to the edge of the container.
- Washing & Conditioning: The purified wheat grains are washed and dried to be prepared for grinding. The moisture content is removed from the grain using the method of conditioning to prepare it for effective grinding. The wheat grains can be dried by either of the three conditioning methods: Cold conditioning, warm conditioning, and hot conditioning.
The cold conditioning involves the soaking of wheat grains in cold water for 1-3 days. Warm conditioning involves soaking the wheat grain at 40°C for 60-90 minutes. Hot conditioning involves soaking the wheat grain at 60°C for a short period.
- Grinding: The wheat grains are first passed through a device known as an entoleter for blending the wheat grains. Following this, the wheat grains are passed through metal rollers. They contain spiral grooves that crack open the grains of wheat.
Now the rollers separate the different types of grains. The finest material known as middlings is collected in a separate beaker. The other two are semolina and a part of bran that is again passed through the metal rolls. The middling purifier shakes the middlings in a vibrator, and the air separates it from the bran particles.
After this, the middlings are again made to pass through the metal rollers and the flour manufactured is then passed through sieves of different sizes. By repetition of the process, different grades of wheat flour are manufactured which are then mixed together to form the desired product.

- Only the wheat grains that passed the test based on physical and chemical properties are selected for the process of manufacturing wheat.
- During the process of purifying, each wheat grain is checked for purity according to set standards. If the wheat grains are not as per purity standards, the process is repeated for attaining the required purity.
- The equipment used in wheat flour manufacturing is cleaned using ultraviolet light and hot steam. It is also treated with antibacterial agents to kill any unwanted organisms.
